Distilled Lemon & Lime Gin Recipe (Botanical Gin Style)

Makes approx. 700–750 ml

Ingredients:

Neutral spirit 1 litre at 40% ABV

Fresh lemon & lime zest: 25 g

Juniper berries: 20 g

Coriander seeds: 4 g

Fresh lemon slices (vapor path): 50 g


Method:

Prepare the base:
Use a neutral spirit (like vodka) as your base.

Load botanicals:

Add the juniper berries, coriander seeds, lemon and lime zest to 1 litre of neutral spirit and infused for 24 hours in an air tight jar (I use 1 litre Kilner jars).

For extra citrus I placed lemon and lime slices in a vapor basket for vapor infusion.

Let the distillate rest for a day or two.

Dilute with distilled water to reach desired strength (typically 40% ABV).

Filter if any oils have clouded the gin.

Bottle and store:
Enjoy after a few days of resting for best flavor.
